Happy birthday Atzaró

Once upon a time, a family by the name of Guasch lived in a typical Ibiza finca set on acres and acres of beautiful, thriving farmland and orange groves in San Lorenzo, in the island’s north. Over time, the family grew, and with each new arrival – and as is the Ibicenco tradition – the farmhouse was extended to accommodate the ever-expanding brood. Five generations of Guasch family occupied the finca (most of them were even born in the house) over the years, witnessing the evolution of Ibiza from a quiet Mediterranean island into a hippie paradise, followed by the cosmopolitan holiday destination it has become today.

Little would the original Guasches have known, that their much-loved finca would go on to become one of the most iconic buildings in Ibiza and that their family legacy would be talked about all over the world, with people flying in from all corners of the globe to visit the place where their ancestors had lovingly tended the groves. Fats forward to 2004 and farm life was no longer a daily reality – most of the current generation of Guasch children had gone on to successful careers in the construction, design or property industries – and the finca that had been such an important part of their family was ready for a new lease of life.

At that time, Victor Guasch spotted a gap in the market for luxurious holidays that promoted the rustic authenticity of the island he was born and bred on. His idea to transform the finca into a five-star Agroturismo hotel, with beautiful gardens, high-end restaurants and a heavenly spa was brilliant, and perfectly timed – fast forward 15 years and Agroturismo Atzaró – the new incarnation of the Guasch family finca – is one of the island’s leading resorts. Having expanded exponentially since the early years, the hotel is now just one arm of the Atzaró Group, which also includes a bohemian beachside restaurant and chiringuito, Atzaró Beach, a healthy farm-to-table restaurant in the heart of the island, Aubergine Ibiza, a luxury events production agency, and even an incredible authentic Phinisi yacht in Indonesia, the Prana by Atzaró.

This week, the hotel that started it all celebrated its 15th anniversary, with a glamorous party and catwalk show held on the grounds at sunset and into the night. On an island like Ibiza, where businesses and people come and go so quickly, an accomplishment like this is something that truly deserves to be celebrated and the who’s who of Ibiza, along with the UK fash-pack (and me!) set came together beneath the stars to do just that. The opening of Atzaró was just one year before my time in Ibiza, and since then I’ve been to many a glamorous ‘do on the grounds but there was something about this particular night that felt a bit like stepping back in time…

Perhaps it was because absolutely anyone and everyone you’d ever met in Ibiza over the last 15 years (a little less if you’re me – just jumping on the bandwagon) and there was a real feeling of nostalgia on the steps leading down from the main chill-out area, La Veranda and The Orange Tree restaurant as people caught up, mingled, and introduced their partners and offspring to those they may not have seen in many years. It felt a little bit like all the tribes of Ibiza had come out to play – north, south, east, west, the townies and the Santa G-eezers all came to pay their respect to what has become such an iconic Ibiza brand.

After drinks at the bar, some snacks from the food stalls, and a wander around the photography exhibition of the Prana by Atzaró yacht (no prizes for guessing where all of the island’s gypset will be headed on their winter vacations this year), we took our pre-allocated seats (FROW-ing! Thanks Atzaró!) for the highlight of the night, the catwalk show. Over the past decade, Atzaró really has become known as the home of fashion in Ibiza, hosting some of the biggest catwalk events and style launches the island has ever seen. For its 15th anniversary, the brand pulled out all the stops, with 10 designers – most from Ibiza and a few special guests – invited to present their collections on the gorgeous poolside runway.

When it comes to Ibiza fashion, it doesn’t get any better (in my opinion, for what it’s worth) than World Family Ibiza. I had the honour, the privilege and indeed, the joy to interview the brand’s founder and matriarch Merel for Issue 4 of WHITE Ibiza Magazine (go get it! Click here to order it now and read all about her amazing life!) and let me tell you, I am now a World Family fangirl for life. Anyway, I digress – it was World Family Ibiza who opened the show and as songs about love floated over the airwaves, a lookalike John and Yoko walked down the runway as if it were the most normal thing on earth. Afterwards, a bevy of beauties in the most incredible bohemian ensembles started to strut their stuff, with the entire World Family clan – all the children, the grandchildren and even Merel’s 80 mother, who was being spun around in joyously circles in her streamer-clad wheelchair… honestly, I’m starting to tear up now at the memory.

It was such an emotional parade to watch… The show went on for about 90 minutes – it was like a non-stop fash-athon – with other iconic island names like Victoria and her La Galeria Elefante brand and label of the moment (and all the models’ fave) De La Vali, plus UK ‘it’ label Rixo London, Isabel Moore and Yasmine Eslami. Then show progressively went from flowy boho to beachy, then sexy, sassy and sultry, with lots of 80s-inspired metallic pieces making me wonder if I DO actually want to go our clubbing this season after all… Fortunately after the show, each of the designers had a pop-up boutique in the fashion market for all the girls in the audience who had the exact same thought as me!

As much as the show was wonderful, I have to say, in the end I preferred the sport of crowd watching – there were just so many interesting people in attendance! Of course, there was a gaggle of socialites you’ll probably know from the UK papers (but I didn’t because I live here in my press-less bubble), there were some actresses, some singers, there were hair and make-up artists galore, and there were all the key business owners from Ibiza, along with all the well-known multi-generational Ibiza families, which of course, includes the Guasch family. What an incredible legacy, and what an amazing achievement. Happy birthday Atzaró – here’s to the next 15 years!

Natural authentic Ibiza luxury

Typical Ibicenco architecture and interiors take centre stage in the gorgeous and spacious new reception space at the finca’s entrance, which opens into a plush, comfortable sitting area filled with deluxe sofas covered in organic white cotton and an open fireplace. Striking Sabina wood beam ceilings complement the terracotta tiled floors and white plaster walls, with touches of gold playing homage to the island’s North African and Moroccan history. Lining the walls of this area are beautiful black and white photos of three generations of the Guasch family, still proudly presiding over the space that was once their cherished family home – transformed into a luxury hotel in 2004. This traditional styling theme and earthy, rustic colour palette continues throughout the hotel’s 24 bedrooms, where emperor sized teak four-poster beds dressed in luxe white linen immediately command attention – begging to be sunk into – alongside beautiful bespoke furnishings designed with loving intention by Atzaró and handmade by artisans from around the world. Each bedroom evokes a feeling of calm; of purity; of total relaxation while boasting all the mod cons a discerning modern guest could ever require.

The finca and surrounding buildings’ exteriors have been given a fresh lease on life, repainted in the signature all-white hue of a traditional Ibiza home – living harmoniously alongside the vibrant colours of nature outside. Pops of colour within each bedroom come courtesy of a series of bespoke paintings created for the hotel, each telling a tale of the finca, the farm and orange groves. And speaking of those oranges again, each room is subtly scented with a room essence custom created from a blend of orange blossoms plucked from the gardens and onsite botanicals. If the main finca is set in the heart of the orange groves, one could say the groves, and indeed the entire Atzaró hotel, are situated in the heart of authentic Ibiza. Surrounded by lush, green mountains and fully functioning farmlands, drenched in the island’s famous golden sunlight and with endless bright blue skies above, a stay at Agroturismo Atzaró is an escape to paradise. Agroturismo Atzaró does many things very well but when it comes to relaxation, this bucolic boutique hotel is unsurpassed. Chill out on the Balinese daybeds soaking up the gentle winter sun, stretch out your worries in yoga, steam your day away in the sauna and let it all slide away like massage oil off your back with an array of treatments that are amongst the best in the world. Oh, and then cocktails naturally. Followed by dinner, of course, made from organic ingredients sourced from the hotel’s in-house restaurant’s own garden. Health and wellness all wrapped up for winter.

A midsummer night’s dream

Rare – because it’s only open at night during July and August, a true midsummer night’s dream. Beautiful – because have you seen Atzaró? And prized because it’s a sanctuary, attended only by those in the know. If David Attenborough did a documentary about restaurants his dulcet tones would turn positively excited about La Veranda on a summer’s night. Crisp white tablecloths are dressed with vases of wildflowers; lanterns swing from the branches and bushes in lush pockets of greenery. Huge circular pendant lights hang from the pergola casting a warm glow over the refined yet relaxed space, shadows from the palm trees are playfully reflected in the content faces of fellow diners. There’s something really special going on here, something that many attempt to imitate but few are able to achieve.

Starting with a cocktail is the perfect way to ease into the occasion. Resident mixologist and all round cocktail obsessive, Rubén Ruivo, presents a beautifully curated list of his greatest creations and classics. The Umami is concocted with premium sake infused with cucumber and a splash of Atzaro’s homemade organecello – like limoncello but made with oranges grown in the garden directly behind the restaurant. It goes perfectly with anything but comes into its own when accompanied by a sushi board. When ordering Rock & Ron make sure you watch the making. A cup is placed over burning cinnamon. A few slices of ginger, a splash of Kraken rum, a little cane sugar and a squeeze of lime are shaken with ice. As the cup is lifted, the smoky cinnamon aroma is captured by the icy liquid and topped with Thomas Henry ginger beer. A tiny cup of dehydrated pineapple is added as a sweet, crispy counterpart. Lift cup, sip, and relax…

The La Veranda menu has its roots in the Mediterranean with some delightful side trips through Asia and South America. Appetisers come under the title ‘Something to nibble’ and are straight up Spanish delicacies including Santoña anchovies, homemade croquetas, morcilla from Burgos, grilled red prawns and the highest quality hand sliced jamón. Enjoy these as a little pre-dinner snack with an aperitivo. Entrées are where things start to really infuse the Atzaró vibe. Bright beetroot and watermelon gazpacho with kefir and sauerkraut is refreshing and delicious. Sweet and savoury combine beautifully in the foie micuit with figs, onion jam and torrija – a traditional eggy toast. Three hearty salads are designed to be enjoyed by one or more, plus the creamy burratina makes it difficult for your dinner companions to keep their forks away.

Even though there are touches of the traditional about La Veranda, diners can feel free to break away from convention and order a bunch of mains to share at the table. The sushi boards are as varied as they are colourful and make a perfect beginning to the rest of the taste bud popping show. Don’t forget to order sushi with the aforementioned Umami cocktail – a match made in heaven. Moving right along to the ceviche, which is served in a whole fresh coconut shell where succulent sea bass and cubes of sweet potato swirl in a piquant and perfectly sharp chilled broth. The red tuna is tender and thinly sliced and comes resting on a dense dashi consommé accompanied by crispy sesame crackers. Order as much as the table can fit because the scallops and rotja are also divine.

Beef sirloin is served with three Jerusalem artichokes stuffed with a creamy filling sitting atop homemade kimchi – this dish is surely the La Veranda signature. Or perhaps La Veranda has created a whole menu of signature dishes when you consider the local sucking pig and the marinated rack of lamb. Plus everything is a work of art, even the olives and aioli comes out with the daintiest scattering of miniature red and purple petals. As if magic really does exist, an elegant gentleman sits alongside a young man with a guitar. A gentle beat emanates from his weathered hands. This enigmatic character begins to sing a Flamenco deeply rooted in the culture of Sa Penya – the neighbourhood under Dalt Villa where he resides. The ambience is electric with the knowledge that something unique and authentic is being transmitted via his heartfelt song.

Eventually the musicians move to the bar area where more cocktails, drinks and snacks are on offer at oversized sofas and beds. The atmosphere is so alive with joyfulness that it’s not long before everyone is up and dancing to shouts of olé. No doubt later on the resident DJ will continue the festivities but for now everyone is in the moment, one they know few other tourists will ever get to experience. Except the lucky ones, of course…

Made with love

The interior dining room glows with an antique chic, a dash of modern colonial and laidback Mediterranean style. Head chef Lucia Ferrer has spent the winter travelling and percolating ideas for the new season menu, which is as fresh and exciting as ever. “I love to travel,” says Lucia. “Every place I go I always bring something back with me and add our own Mediterranean touch, or really, I should say an Ibicenco touch.” The 2017 La Veranda menu is testament to her imaginative cuisine and illustrates her deep respect for the produce of the island. “When it comes down to it, I just love it here,” she says of her role in the restaurant. “Everything is made with love.” Which also pretty much sums up what Agroturismo Atzaró is all about.

New dishes on the menu this year cover the gamut of everyone’s preferred local ingredients. Grilled octopus has been a favourite of Mediterranean fishermen for millennia and Lucia’s version brings it full circle into the Atzaro vibe. Juicy, locally caught octopus sits on a bed of mashed yellow potatoes with tender vegetables, all of which are suffused with a smoky, chilli piquancy. It’s a classic dish brought to a whole new level. Another of Lucia’s favourites are the chicken tacos, a dish inspired by her travels through South and Central America. “We are very particular about the provenance of the chicken we use,” she says. “It is always free range, country raised. The tacos are so simple yet so tender.” They’re served with tomato tartar, fresh avocado and the sweetness of pineapple to bring out the flavours.

Sweet and delicate Santoña anchovies served with Arbequina infused tomatoes are another delicious example of a Spanish classic done to perfection. Lucia describes the Bluefin tuna from Galicia as “spectacular” and is particularly enamoured with this year’s local red prawns, which she sends out with potatoes and suquet. “We use produce from the island – a lot of it from our own gardens,” she says. “My inspiration comes from the natural flavours of local, seasonal produce. I love simple things.” This is Lucia’s fourth year at the helm of the La Veranda kitchen and she is as enthusiastic as ever. Overseeing the two daytime menus, plus events and fine dining offerings in July and August, she has developed a keen sense of what people are looking for. “It’s very intuitive,” she says of evolving the Atzaro menus. “This is my place. I instinctively know what is going to work”. This year, that means creating a new daytime menu that reflects the changing ways clients’ view food and wellbeing.

Working with Oliver Morgado Alfonso, a long-time friend and now collaborator, Lucia has launched a new daytime menu available on the terraces, in the pool area, spa and for delivery to the private villas of the hotel. The theme is based on the principles of Ayurveda, an ancient Hindu system of medicine that balances the body using food, herbs and conscious intent. It may sound complicated but the culinary results are completely sublime. “We put a lot of intention behind the preparation and development of each dish,” says Oliver. “Each ingredient carries a healing property and acts as preventative medicine.” Despite, or perhaps because of, this intention the menu is brimming with healthy, light and incredibly delicious dishes. “We wanted to continue on from the theme of wellness that stems from the Atzaró Spa,” adds Lucia. “Its about people relaxing, sharing a plate by the pool or on the terrace and knowing that it is good for them as well as being tasty.”

Contrary to preconceptions, Ayurveda does not mean vegetarian and the menu features a Vitamin C Antiox salad of langoustines with wakame seaweed, pomelo, edamame, spouts and chlorophyll alongside Oliver’s favourite Revitalising Cold Soup made with coconut, turmeric, garlic, ginger, avocado, and hemp salt. “It’s probiotic,” he says. “All the ingredients are in harmony both at a health level and a taste level.” Regular La Veranda diners can still get their classic Atzaró dishes, such as the juicy Hamburger Duo – one made with legumes and the other with ‘happy’ Wagyu beef. And the Peruvian Ceviche remains a lunchtime pleasure, as are the popular Beef Tacos and Falafel Royal. As always behind the innovation and imagination at La Veranda lies a Mediterranean heart and soul. Lucia sums the Atzaro concept perfectly: “In the end, people do want to try new things as well as their favourites. For me it is always about fresh, quality ingredients and love.”
