Making an indelible mark in the kitchen at IT Ibiza in Marina Botafoch is Michelin-starred new executive chef Francesco Sodano.

When IT Ibiza first opened its stylish doors in Marina Botafoch in 2015, it quickly cemented its reputation as the place to be, night after night, all year round. Thanks to its combination of contemporary design, a frontline harbour setting with breath-taking views of Dalt Vila, world-class cuisine, impeccable service and a carefully curated soundtrack, the fine dining restaurant continually attracts discerning foodies from across the globe, cosmopolitan jetsetters and in-the-know island residents. Eventually, the IT experience became so in-demand that the brand expanded into five additional style-setting locations: London, Milan, Tulum, Mykonos and Porto Cervo.

The flagship outpost in Ibiza remains the jewel in the crown of the IT Restaurants empire, and this season sees it raise the gastronomic stakes as Italian-born, Michelin-starred chef Francesco Sodano joins the ranks as new executive chef – yet again, IT Ibiza is the talk of the island. This exciting new hire is further proof that the restaurant takes its position in the Ibiza culinary world seriously – rather than rest on its well-established laurels, the team are always evolving, relentlessly striving for excellence, and forever seeking to give their customers an unforgettable experience and even more reasons to return.

Hailing from the Campania region in southern Italy, Sodano grew up in a family of foodies, restaurateurs and chefs, and spent years spent traversing Italy perfecting his craft in high-end restaurants of Sorrento, the Amalfi Coast and Rome to gain experience in specialities such as molecular gastronomy, sous vide, baking and pastry. He credits his mentor, the famed Michelin-starred chef Anthony Genovese of two-starred restaurant Il Pagliaccio, with developing his management skills while working alongside the legendary Pierfranco Ferrara in the same kitchen.

Before being lured to the white isle in 2023 by IT Ibiza, Sodano took on high-level roles at the renowned Nikita Malibu in Los Angeles, Quattro Passi in London’s Green Park, Annabel’s in Mayfair and the award-winning Enoteca Turiin Sloane Square. It was on his return to Italy that Sodano was awarded his first Michelin star, during his tenure at Il Faro de Capo d’Orso Maiori in Salerno. Here, he also received three Cappelli from Guida L’Espresso (the Italian equivalent of the Michelin Guide) and many other accolades that made him one of the most in-demand chefs in Europe.

With much respect to his homeland and IT Ibiza’s culinary roots, Sodano’s new menu plays tribute to Italy, the Mediterranean and Ibiza.

Sodano’s creative new à la carte menu elevates the IT Ibiza fine dining experience to new heights. Constantly innovating, he works with varied techniques such as smoking, fermentation and oxidation, while always allowing authentic flavours to shine. Take the IT Fish Market menu for example, where the purity of raw carabineros, plump red Ibiza prawns or Gillardeau oysters need little in the way of enhancement – although Caviar Beluga Giaveri is the perfect accompaniment. Delicate carpaccios and tartares are perfect for sharing on hot summer nights – the smoked amberjack carpaccio with pickled vegetables and josper mayonnaise is a standout, as is the savoury twist on Mediterranean bluefin tuna tartare with tomato foam, capers and olives.

Lovers of classic Italian cuisine will find it hard to bypass the crunchy aubergine parmigiana, while eagle-eyed foodies will spy the meunière baby squid with sautéed glasswort or the josper artichoke with free-range local egg, potato mousse and summer truffle as must-try starters. An extensive pasta menu is an ode to Sodano’s homeland – and IT Ibizas heritage – ranging from the classic (and exceptional) spaghetti pomodoro and basil to the more decadent linguine with sea urchins and caviar. Fresh off the charcoal grill are dishes like the mighty tomahawk steak, a juicy Angus ribeye, giant langoustines and either Balearic or blue lobster, plus the fresh catch of the day.

The chef’s passion for pastry and baking is evident on the dessert card, with a tropical-inspired (and gluten-free) coconut mousse with mango and passionfruit sitting alongside the seriously addictive banana split and bourbon pie; or the mouthwatering hazelnut ingot. With this innovative new menu and an ambitious new chef (Sodano makes no secret of his desire to earn more Michelin stars in the not-too-distant future) in their arsenal, there’s no doubt IT Ibiza is one of the island’s hottest culinary addresses right now.

And speaking of addresses – the restaurant’s harbourside location is undoubtedly the best place in Ibiza to take in unparalleled views of the jaw-dropping St Ciriac fireworks display this Tuesday night (August 08, 2023) – reservations are essential to experience sparks flying in both the kitchen and the sky. The annual event celebrating the patron saint of Ibiza culminates at midnight, when the sky above Dalt Vila is illuminated with thousands of colourful and creative fireworks. The lively streets of London’s Soho are a hotbed of gastronomic inventiveness, with people flocking from far and wide to sample its eclectic array of restaurants led by the most talented chefs in the business. For years, the Spanish tapas restaurants Barrafina have topped that list, earning a place on every foodie’s hit list. The unrivalled skills of Ángel Zapata Martín are to thank, but now the acclaimed chef has swapped the big smoke for beach life, landing on the white isle to take the helm at brand new restaurant Lado Ibiza, a new concept from the group behind IT Ibiza.

Barcelona-born and a Catalonian to the core, as a child, Ángel was inspired by his uncle’s unique approach to cooking, which riffed on traditional Spanish dishes but emboldened them with personal flair. Growing up, his style rubbed off on Ángel, who initially studied architecture but soon realised that his heart lay elsewhere, before enrolling at the prestigious Hofmann School of Hospitality. The switch paid dividends, and after training in multiple acclaimed restaurants around the globe, he set to work at Barrafina, earning the eateries a coveted Michelin star. His next culinary adventure brings him to Lado Ibiza.

Set within the sophisticated and sparkling surroundings of Marina Botafoch, second home to the island’s visiting super yachts, Lado Ibiza is a waterside restaurant that overlooks the Mediterranean Sea and the instantly recognisable skyline of Ibiza town in the distance. Divided into sections: raw, grill, sliced, main dishes and desserts, each plate celebrates the bold and vibrant flavours of Spain by using the finest quality ingredients and bucketloads of culinary flourish. The results are nothing short of magnificent.

The Lado Ibiza menu begins with a hand-picked selection of raw dishes. Bluefin tuna caught in the crystal-clear Mediterranean Sea is served tataki style, with chutoro tartare and salmorejo, a traditional Spanish soup made with tomato, bread, olive oil and garlic. Yellow tail is served in a special marinade, and oysters come in typically lavish fashion, with cava cream, pickled cucumber and caviar. On the grill, the red shrimps – famed across the Mediterranean for their superior quality and taste – are unmissable, while the Frisona beef tenderloin is juicy and perfectly cooked.

Classic Spanish dishes are also given a fresh new spin at Lado Ibiza. Old favourites are still present, of course – think tasty pan con tomate; creamy ham croquetas and cured Iberian pork. But they sit alongside oh-so-soft aubergine with goat cheese and quince; gooey Reblochon cheese and fresh truffle toastie; succulent Sáncular king prawns with white garlic melon; and local asparagus served with courgette flower and truffle. Don’t miss the traditional tomato salad, made using tomatoes plucked fresh from island plants, to experience the talents of Chef Ángel in action.

Where science and wellness collide – The Longevity Suite Ibiza

The world of wellness is never static; it’s a constantly evolving field that’s researching, learning and developing all the time. And with some of the brightest minds in the world at its forefront, the industry has moved forward at a rapid pace in recent years. At the beating heart of all The Longevity Suite protocols is cryotherapy, the ground-breaking treatment that centres on controlled exposure to cold temperatures. The process involves stepping into a specially designed chamber and withstanding temperatures of up to -95 degrees for a period of three to five minutes. The scientifically proven results are staggering: a reduction in inflammation; quick recovery from high intensity activities; a quickened metabolism, and better mood, among many more. A session helps to reduce oxidative stress (an imbalance between free radicals and antioxidants in the body), which is pivotal to a longer, healthier life.

It’s for this reason that Dr. Gualerzi developed an approach to anti-ageing that has a strong focus on cryotherapy. The Longevity Suite Method concentrates on three primary pillars: cold, detox and awareness. While Ibiza’s music geeks were getting their kicks at the annual IMS grand finale, I took the opportunity to escape Dalt Vila for the night, crossing to the other side of the port for the unveiling of Ibiza designer Marinela Cifteli’s new Kurru Kurru boutique. Since you could hear the music booming across the water anyway, I figured I had the best of both worlds!

Set at the end of the Paseo Maritimo, just before reaching the end of the street, the über-chic storefront is set back from the road, giving it a feeling of exclusivity. The latest feather in Marinela’s cap (or, kitty ears as the case may have been on this occasion!) is a sassy, sexy and chic space (I’d expect nothing less) bursting with evidence of her creativity and femininity, and that of her collaborators, including long-time co-conspirator, milliner Julia Cranz.

Flutes of pink champagne clinked in the air, mingled with the distinct ‘mwack’ of constant air-kissing. Cute canapés were being circulated by equally cute waiters, and Ibiza’s style set were wolfing them down like they’d never seen a mini ice cream cone before – who said fashion people don’t eat?

Scantily clad models braved the breeze to show off their Kurru Kurru ensembles, making the rest of us mere mortals feeling like dumpy wallflowers, no matter how many hours of yoga we’d done that day. But no one could outshine the woman of the hour, as Marinela worked the room in her aforementioned sassy kitty ears, showing off her latest lacy collections, elegant kaftans and floaty princess skirts – something for all Ibiza girls.

Intimate the Kurru Kurru boutique may be, however the small space was perfectly packed with absolutely everything a girl (and perhaps a few guys!) could dream of. In fact, speaking of intimacy, the glass-topped counter held quite a few naughty accessories – and this time, we’re not talking fashion – that had everyone talking (“But where do you…? How do you…? Who do you…? Huh?”) and giggling like a bunch of schoolgirls!

In addition to the toys, one corner held a collection of absolutely divine underwear, ranging from sweet to sexy and including some truly stunning corsets (resulting in my new mantra of “must do more yoga, must do more yoga”). Designer label shades, metallic iPhone covers, amazing headpieces, hand-crafted leather accessories and super cool jewellery complemented Marinela’s collections.

My favourite feature of the store (after the clothes of course!) however, is the wall covered in Barbie dolls, in all different poses and err, pieces! I was also drawn to the quirky bunny masks and bling – oh what fun I could have if I had a credit card with no limits in this place! Like Alice down a rabbit hole…
