For the uninitiated, Mezcal is no ordinary drink. Considered a powerful medicine in Mexico, it comes from the sacred agave plant, which takes around seven years to grow, and is then cooked in an underground oven for seven days to create honey. Mezcal is the complex spirit taken from this fermented honey – like liquid sunshine.
