Every Friday night, San Juan fine dining destination Gare Du Nord Ibiza hosts a ‘Table d’Hôte’ event, which translates loosely to Chef’s Table. Head chef Emanuel Anzel Martinez hits the local markets early in the morning to find inspiration in the island’s fresh, seasonal produce and ingredients and returns to the restaurant to custom design a menu on the same day.
