Rooftop Nine at INNSiDE Ibiza Beach is a gorgeous extension of the seafront hotel’s chic interiors. Slick white sun loungers and Bali beds line the alfresco terrace and comfy bean bags are dotted about the deck. A central bar gleams in the sunlight, and the picturesque infinity pool shimmers invitingly, drawing eyes towards the endless blue horizon across the bay of San Antonio.

Every Wednesday, Ibiza’s largest organic farm, Terra Masia, visits with a pop-up market corner showcasing the homegrown seasonal fruits and vegetables behind the exclusive cocktail and smoothie menu offered at the hotel. During the day, sample juices, smoothies and organic lemonades and teas, then as the afternoon unfolds, the Rooftop Nine mixologists craft a variety of cocktails including exclusive creations featuring Terra Masia’s own organic gin.
