The biggest names in hospitality — including a two-Michelin starred chef — combine to create ASAL Ibiza, an upbeat, fine dining Ibiza restaurant whisking guests from table to club in no time

A network of the world’s most creative hospitality minds is behind ASAL Ibiza, a Marina Botafoch fine dining venue that’s the latest word on the lips of foodies and night owls across the island. A spectacular space housed underneath Ibiza Gran Hotel, among the illustrious company of fellow esteemed eateries La Gaia, Cipriani and Zuma, the Ibiza restaurant is the combined master stroke of famed chef Mario Sandoval, whose former projects include Coque in Madrid, and revered designer David Aleyato.

The exclusive experience at ASAL Ibiza begins the second you step foot through the door. Inspired by the artistic prowess of Spanish mastermind Antoni Gaudí, the high-end design concept weaves through three distinct spaces in the chic Ibiza restaurant: the Chef’s Salon, the DJ Lounge and the Garden Terrace. Surfaces are smooth and curved, colours are muted but striking, and the overall effect feels modern but timeless. Designed to take guests on an encompassing late night journey that evokes the mood of a club, preparing you for a typical nocturnal adventure on the white isle is par for the course.

First, it’s essential to take a moment to appreciate the world-class gastronomy that rests at the core of ASAL Ibiza. Highly decorated chef (two Michelin stars and three Repsol Suns) Mario Sandoval is at the helm of the kitchen in this Ibiza restaurant and he’s created a menu inspired by the Mediterranean with sustainability at its heart. Diners can feast on a set menu with wine pairing or choose from a delectable range of à la carte options. Sharing plates include lobster tartare with ginger vinaigrette and Ossetra; chilli king crab with crispy bread; and top sirloin cap carpaccio with picual olive oil and black pepper.

Mains at ASAL Ibiza range from black monkfish with green sauce and grilled baby vegetables to Ibicencan lamb ribs with ulzama milk; and for the vegetarians, zucchini cannelloni brimming with spinach and nuts. Meanwhile, ultra-accomplished London sommelier Zack Charilaou has curated the wine list, spotlighting a handpicked selection of the finest drops from around the globe. He works alongside a crew of some of the world’s most brilliant mixologists, who whizz up the most innovative cocktails found on the island. This Ibiza restaurant aims to showcase top tier talent, a fact that’s palpable at every stage of the evening.

The team at ASAL Ibiza has also enlisted the help of some of the island’s leading tastemakers to curate the venue’s nightly music programme. Island legend Dawn Hindle (Pikes, Manumission) is behind the Thursday night party A Brand New Dawn & Somebody Else’s Guy, while Friday’s Ricardo+1 and the Saturday Soirée has already proven popular.
