An alliance between these two iconic names is a true gift to the island, allowing visitors and locals to bask in the gastronomic joy of Garcia’s extraordinary food and the exceptional service of the day-to-night Ibiza restaurant.
The fifth addition to Garcia’s BiBo concept and the ninth restaurant added to his ever-expanding cache of modern eateries, BiBo Ibiza Bay offers a whole new take on casual yet chic dining. The Malaga-born chef uses his Spanish roots as a foundation for the global flavours he brings to the plate. Utilising only the freshest ingredients, Garcia takes diners on a tour of his favourite destinations – including a flavour trip around Mexico’s most beloved street food – through innovative techniques and tastebud blowing experiences.
Those already enamoured with Garcia’s signature dishes will be thrilled to know the BiBo Ibiza Bay menu features all the BiBo favourites. Oxtail brioche, foie yoghurt tapa, fried hake and many more BiBo delicacies appear alongside the Ibiza restaurant’s homage to Mexico – designed by renowned Mexican chef Abril Chamorro. Chamorro and Garcia go way back, and both talented chefs jumped at the opportunity to bring the tastes of Chamorro’s homeland to the Ibiza restaurant, with the signature Garcia imprint.
Chamorro and Garcia take you through the culinary nooks and crannies of Mexico as you sit beneath a parasol, the blue Ibiza sky soaring overhead and the discreet yet attentive Ibiza restaurant team predicting your every need. Sea bass tacos in a Baja California style vie for attention alongside chilorio pork burritos hailing from the Sinaloa region. The vegetable ceviche with raw green sauce, burrata, tomato and tempura is ground-breaking and it’s hard to pass up the classic chicken al pastor tacos. Be sure to go with friends and an appetite – the entire Bibo Ibiza Bay menu is designed for sharing.
BiBo Ibiza Bay also features a pioneering raw bar serving delights such as local red shrimp aguachile. Steeped in chilli peppers, lime juice and coriander dressed with thin slices of cucumber, the sweetness of the local shrimp is refreshingly contrasted with the citric tones of the marinade. Grilled to order sea bass is served with blue and yellow corn toast while a succulent line-caught tuna loin with avocado and chipotle mayonnaise arrives on perfectly toasted bread.
Fresh ingredients and a citrus piquancy thread all the dishes together at this cutting-edge Ibiza restaurant. Savour the experience with a selection of bespoke BiBo Ibiza Bay cocktails designed exclusively to pair with Garcia’s vision and the mellow soundtrack curated by Ibiza’s very own Sebastian Gamboa or live resident DJs programmed by Guy Williams.
