New to the menu at iconic Ibiza restaurant La Oliva – set in the heart of the walled fortress of Dalt Vila – is the chef’s special of octopus carpaccio with avocado and tomato tartar. Super fresh and light, it is made with the finest olive oil made here in Ibiza and with presentation so beautiful, it is almost too good to eat. Almost!
