Maymanta is the culinary jewel in the crown at the outstanding Aguas de Ibiza Grand Luxe hotel. This stunning Ibiza fine dining restaurant is located on the five-star hotel’s spectacular rooftop. Views of the picturesque Santa Eulalia harbour and the sparkling Mediterranean Sea combine with world-class gastronomy to make this a truly memorable dining experience. Helmed by esteemed Peruvian chef Omar Malpartida, previously one of Madrid’s most talked-about talents, Maymanta received a Repsol Sol in 2020 and is one of the most romantic and striking dinner spots on the island.

Open daily from 7.00pm until 11pm, with cocktails flowing until 1am, this Ibiza fine dining restaurant takes devotees on a whirlwind tour across Peru, the Mediterranean and the Pacific. The menu is divided into mouth-watering sections, each taking cues from the techniques of Peru, the flavours of Ibiza and a smattering of international inspiration. Start with a cocktail from the mobile bar, which roams about the Maymanta terrace throughout the course of an evening. Choose from a range of six refreshing cocktails, featuring tasty tropical fruits paired with Peruvian distillations like Amazonian gin, whiskey and vodka, whizzing you straight to the heart of South America.

With a cocktail in hand, choose a handful of sharing plates from the Tapeo Criollo menu to start. Think Peruvian corn blini with red shrimp tartar; crispy shrimp; ceviche mayonnaise and Beluga caviar or a traditional Peruvian causa made with local potato, yellow chilli, truffle, black garlic ceviche, octopus and avocado tartar topped with crispy squid crackling. Ceviche is a speciality at this Ibiza fine dining restaurant, including a traditional piura made with catch of the day, yuca, zarandaja, chilli, lime, chifles and roasted sweet potato.

For those seeking something a little more adventurous, opt for the zesty pachamanquero with fish, mint, huacatay tiger’s milk, cucumber, seaweed air and salicornia. From Maymanta’s wok, diners can choose from delicious anticuchero with grilled octopus, romesco sauce, charred avocado and pico de gallo or opt for an Italian twist with pillows of homemade gnocchi, rocoto beurre blanc, chorizo oil, Beluga caviar and a cheese foam.

Meateaters will revel in the grill menu, where the Josper oven delivers perfectly juicy cuts of meat plus coquelet chicken with potatoes sautéed in garlic and parsley, and a duo of Andean dipping sauces or the irresistible Chifera skewers of candied bacon, pepper, pak choi, chilli, sweet potato and a spicy dressing.

Leave room for delectable Maymanta desserts like the surprising summer meringue with passionfruit, citrus and seasonal fruits stir-fried in the wok.  Every dish is crafted from products imported from Peru and zero-kilometre produce from Ibiza.
