Founder of successful Ibiza catering company Eat Ibiza and visionary chef-slash-wedding designer and stylist behind gorgeous new Ibiza beach restaurant Elixir Ibiza Shore Club, Vickki Jay’s heart lies within the kitchen and her culinary career was inspired by the desire to make people happy with great dining experiences.
What inspired you to become a chef?
I’ve always loved cooking and just love food, especially desserts and I love making happy. It’s that simple.
Tell us a bit about your background?
I was working as a chef on high-end fashion shoots and then moved into catering and weddings. I fell in love with the love of the food, and the love! We sensed a gap in the market for a wedding venue on the beach with good food, good service and stylish romantic views and décor… so we created it!
How did you choose the name Elixir?
I came across a poem on the internet that was referring to the water around Es Vedra as elixir – liquid that has magical properties. It also means the same in English, Spanish, Danish and a bunch of different languages!
And your style of cuisine at Elixir?
Relaxed, beachside dining that surprises and delights you. Good food that makes people happy. Personally, I think people like to eat food that looks like real food – when you’re hungry, you want food, not art!
What are your favourite restaurants in Ibiza?
I like La Paloma for their date, banana and soy milk smoothies, I love the atmosphere at Aura and everything you order is just delicious. Macao have some really good chefs and I love their simple dishes like pastas, like at Cicale too.
What’s your own favourite food?
Peanut butter! Honey-roasted Skippy peanut butter is my favourite. Hmm, and Laduree macaroons. But maybe not together, haha!
What do you like the most about living in Ibiza?
Too many things! But here are a few – the people, the places, the feel, the outdoor lifestyle and the magic!
