Dish of the day: Chestnut, Mushroom & Truffle Risotto

The chestnut mushroom and truffle risotto is one of chef Vickki Jay’s specialties at Elixir Shore Club – and it’s not hard to see why! Made with homemade stock and Caranoli rice, the risotto is the perfect texture, rehydrated with only cava so it soaks up the sparkling wine’s deep, delicious essence. Infused with saffron, butter and black rind parmesan, earthy chestnut mushrooms are cooked in butter and drizzled with white truffle oil – a decadent dish with lots of flavour!
