Coricancha Nikkei Restaurant & Lounge Bar is the latest high glam offering from the Blue Marlin group, and while it may not be placed on the west side of the island, the sunset views are surprisingly every bit as magical.
The name is an homage to the Inca’s Temple of the Sun and there is no finer place to play tribute to the sun god than this unassuming roadside destination. The simplicity of the all-white hides a chic and stunning interior, with the former finca transformed into a cosmopolitan dining space further enhanced by its views.
Upstairs, the Sunset Terrace is the place to be from 8pm onwards, as the sky puts on an incredible performance each night – a kaleidoscope of colours made even prettier by the twinkling lights on the nearby airport runway. From here, you can also catch a glimpse of elegant flamingos bathing in the salt flats opposite, while low-flying planes arriving to Ibiza add further to the ambience.
All cocktails at Coricancha are homemade from fiercely guarded secret recipes. Spirits are Infused, tinctures and syrups homemade and each drink takes inspiration from the history, traditions and elements of Peru. After sunset drinks, it’s back downstairs to the Moonlight Garden for the finest Peruvian-Japanese (known as Nikkei) cuisine with an international twist, before heading off into the Ibiza night.
