Ibiza restaurants: Black & White Quinoa Tabbouleh at Aiyanna Ibiza

Hip new Ibiza beach club Aiyanna Ibiza is making waves with its fresh and healthy approach to beach dining in summer 2017. Head chef Oskar Reboredo is passionate about incorporating superfoods into his menus and there is no finer example on the menu than the beautifully presented Macrobiotic Black & White Quinoa Tabbouleh.

The combination of the two different types of quinoa allows for a contrast in texture – black quinoa is more ‘al dente’ while the white is traditionally softer. Combined with individual piles of mixed cucumber and mint, tomato and fresh coriander, red onion and kale – it’s almost like a DIY tabbouleh, as you mix the freshness and flavours together on the plate until you reach the combination that is j-u-s-t right. Served with a lemon and olive oil dressing plus a handful of crudité, it is one of the freshest, tastiest and most popular dishes on the menu.
