Ibiza restaurants: Grilled Octopus with Muhammara at Aiyanna Ibiza
At new Ibiza beach restaurant Aiyanna Ibiza, award-winning head chef Oskar Reboredo has crafted a menu that showcases the very best of the Mediterranean with some international flair – not simply limited to his homeland Spain. You’ll see touches of Italy, France, Morocco plus hints from all corners of Asia, and one of the star examples of his fusion skills is the grilled octopus.
Taking the idea of the typical Galician ‘pulpo a la gallega’, Oskar has given it both a Japanese and Moroccan twist. First, the squid is boiled in water in the traditional style, after which he adds an Asian sweet chilli and roasts it in the oven, gratin style. Using the classic Muhammara sauce as a base – roasted red peppers and tomatos ground with fresh nuts, parsley and garlic – the squid sits on top like a work of art, the fusion of flavours complementing each other perfectly in each mouthful.
