Ibiza restaurants: Slow-Cooked Monkfish at Aiyanna Ibiza

Aiyanna Ibiza head chef Luisma Naranjo only had to cast an eye out of his kitchen window and take a stroll through the restaurant’s organic vegetable garden to gain inspiration for this gluten and dairy-free dish that’s chock-full of fresh island flavours.

Sumptuously plump monkfish is slow-cooked in its own juices, enabling the fish to maintain its meaty yet tender texture. Served upon a hearty and wholesome bed of freshly steamed organic millet and alongside gently sautéed home-grown green beans and sun-dried Datterini tomatoes, it is finished with a generous serving of homemade basil (hand-picked from that same garden!) to create a magical combination of mouth-watering tastes.
