Ibiza restaurants: Organic Vegetable Risotto at Amante Ibiza

Whoever said it’s not easy being green clearly had never eaten the Organic Vegetable Risotto at Amante Ibiza!

Head chef Carlos Fernandez looked to the Amante Ibiza organic vegetable garden for inspiration when creating a new dish for vegetarian diners in 2017. Using home-grown green beans, asparagus among other seasonal green produce, he creates a completely natural green stock to colour the traditional butter and parmesan based risotto. Organic veggies are added to the delicious mix – a lovely light flavour ideal for summer lunches – which is then topped by edible flowers. At Amante Ibiza, it’s totally easy being green!
