Ibiza restaurants: Grilled Monkfish at Atzaró Beach

Allowing the simplicity of the fresh monkfish to shine, the fillet is grilled to perfection and served atop a classic mix of lightly sauteed veggies fresh from the Atzaró organic farm: think carrot, courgette, broccoli, onion, aubergine and cauliflower (and anything else that’s in season at the time). The colourful plate is then given a further dose of vibrancy with a drizzle of homemade pesto sauce, adding the delectable flavours of basil, garlic, pine nuts and local olive oil to the mix.
