Juicy king prawns and scallops marinated in the tiniest amount of honey adds sweetness to the salty base of the shellfish. Sitting on a bed of mesclun leaves topped with cherry tomatoes and red fruit for tartness, the whole dish is doused in Modena balsamic vinaigrette and a scattering of bright edible flowers. Take a table or a daybed overlooking the golden sands and soak up the fresh tangy flavours while also soaking up the rays.
