Insalata di Branzino at BEACHOUSE Ibiza

The Insalata di Branzino at BEACHOUSE Ibiza takes the idea of a typically Perivian ceviche and gives it an Italian spin, thanks to the creativity of head chef Sebastian Altimari.

Locally caught sea bass is marinated in a refreshing blend of tomatoes, fresh coriander and basil, spring onion, celery, loads of zingy lime and lemon juice, plus grated ginger and red chilli, before being doused in a puree of yellow pepper and fish broth for extra flavour. All it needs for serving are some fresh basil leaves and slices of spring onion and you’ve got one of the most colourful, and indeed, flavourful dishes on the 2016 summer menu. Whether you opt for a starter to share or as your main, you can guarantee there won’t be a morsel left on the plate when you’re done!
