Ibiza restaurants: Galician Style Octopus at Restaurant Boutique Hostal Salinas
It’s been said that the simple things in life are often the best and this is also the kitchen philosophy at Restaurant Boutique Hostal Salinas. Head chef Miguel Casals hails from Galicia, a land where growing up surrounded by seriously good food is the norm, and learning how to subtly enhance, but never overpower the natural flavours of seasonal produce has become somewhat of an art form.
Like so many Spanish chefs he started his cooking life by his grandfather’s side, helping to prepare meals for the family and his ‘Pulpo a la Gallega’ (Galician octopus) technique has been handed down through generations. Freshly caught squid – often from the nearby waters of Formentera – is slow-boiled to perfection after being frozen for two days (a handy Galician trick to tenderising the flesh), along with local Ibiza potatoes. Both are delicately sliced then the octopus is placed atop the potatoes, drizzled with olive oil and topped with vibrant amber paprika. And that’s it. Simple, delicious and one of the best things in life.
