Lightly seared scallops sit on a surprising dollop of mango and ginger purée. The sweetness of the sauce compliments the sweetness of the scallops adding an extra layer of complexity. Surrounding the dish is a smear of parsley sauce, balancing the sweetness with just the right saltiness. A sprinkling of roe and flower petals complete this pretty dish.
