Ibiza restaurants: Slow-cooked Lamb Shoulder at Cotton Beach Club
The thought of ordering a shoulder of lamb in a beachside restaurant can be a little overwhelming on a hot summer day – that is, unless you are ordering the slow-cooked lamb shoulder at Cotton Beach Club in Cala Tarida.
The kitchen at Cotton Beach Club take a hearty classic and turn it into an elegant work of art – in terms of flavour and presentation alike. The lamb is slow-cooked, sous vide style (under vacuum) for 24 hours, before being removed, deconstructed and then reconstructed into the perfect cube-like portion of meat, further cooked in a pan to crispy perfection.
Drizzled with a demi-glace sauce and topped with dried chili shavings and pistachios, it is served with a very light mash of pumpkin and sweet potato, plus caramelised pumpkin bites made using the chef’s grandmother’s cherished recipe. Soft and sweet yet crispy and savoury, it is the perfect fusion of textures and tastes while being light enough for summer.
