Ibiza restaurants: Som Tam Salad at Cotton Beach Club

Inspired by the many fiery green papaya salads tasted during his travels through Thailand, Cotton Beach Club head chef Federico Garcia has created his own tribute to the Som Tam Salad for the summer 2017 menu in the famed Cala Tarida beach club. Garcia calls his take on the dish a ‘fake Som Tam’ with a knowing grin, understanding the intense heat of true Thai spice is not something for a hot summer day in Ibiza, nor is it generally suitable to the European palate.

The typical flavours and zest of a Thai salad are all still there however, just tamed down to suit the Ibiza summer. Chunks of succulent king crab sits alongside fresh carrot, courgette and daikon (Japanese radish), swimming in a delectable mix of palm sugar, mint, basil, fresh lime and fish sauce, then topped with toasted peanuts. Each and every mouthful is an explosion of flavour and freshness – the perfect adaption for the white isle.
