Ibiza restaurants: Peking Duck at Cotton Lounge Club
One of the island’s standout stars of the 2017 culinary scene is without a doubt Cotton Lounge Club in Figueretes. The fine-dining restaurant enlisted the services of highly acclaimed island chef, Alex Arquero, who originally made his name at Bambuddha, in between winter seasons spent traversing the globe in source of gastronomic inspiration.
Arquero’s pièce de resistance is his take on the classic Peking duck – where the most tender duck breast is slow-roasted at low temperatures and carved into the perfect fine slices to slip between the homemade crepes. The twist comes via a pungent sweet cherry sauce and red wine shallots that envelop the tastebuds – truly a decadent dish and one well worth sharing.
