Allowing the natural flavour of the beef to shine through, Jèrome grills the 600-gram steak at room temperature, to ensure it heats evenly throughout over the low-heat flame. Only after it has been cooked to perfection does he season it with the classics – simple Salinas salt and black pepper – to avoid the meat drying out before being served up with a side of summer truffle jus, freshly grilled Mediterranean vegetables or green pepper sauce, with a side of sautéed potatoes and bacon.
