Ibiza restaurants: Nomadic Squid at El Clodenis

One of the hottest new names on the Ibiza gourmet map this summer is also one of the oldest. Iconic Ibiza restaurant El Clodenis has been reinvented for the 2017 season as a 100-day pop-up restaurant, showcasing a unique fusion of food, art and music in the stunning poolside location, tucked away in the village of San Rafael.

Using locally sourced produce where possible, the menu is Mediterranean focused with flecks of more international influences – think South America, Thai and Indian – and nowhere is this fusion more obvious than in one of the restaurant’s signature dishes where the clue lies in the name: Nomadic Squid. Freshly caught calamari is glazed in a smoky, spicy chipotle chilli and lemongrass sauce and served on a banana leaf, with sprinkling of fresh peas and perfect potatoes on a creamy seafood sauce. A clever twist on the Spanish classic octopus Gallego, while simultaneously evoking the flavours of Mexico and Thailand. Quite simply… wow.
