Ibiza restaurants: Fresh Tomato & Burratina Salad at El Olivo Mio

Each and every night, the cobbled streets of Dalt Vila are transformed into a nightly performance – one part fashion show, one part entertainment, another part pure romance – as hundreds of people explore the beautiful area in search of the perfect alfresco dining experience. At the heart of it all is El Olivo Mio, the stylish restaurant space with well-known Ibiza restaurateur Rita Sachs (formerly of Sa Punta) at the helm, serving up the finest Mediterranean cuisine with international flair.

The restaurant’s Fresh Tomato and Burratina Salad is definitely something to write home about. Creamy fresh Burratina cheese is placed atop a mixture of locally grown tomatoes in all shades of green, orange and red – each with its own unique flavour. Black olives, fennel, pine nuts and basil provide the perfect accompaniment, before the salad is drizzled with the chef’s own homemade Salmorejo. Salmorejo is similar to traditional Gazpacho, minus the tang of celery, so it acts an almost creamy dressing over the salad. Beautiful in its simplicity, each of the flavours on the plate are allowed to shine – ideal for a starter or main course alike.
