Ibiza restaurants: Crema Catalana at El Portalón

A certain genius is required to take a traditional dish, pull it apart, put it back together and actually make it work. The chefs at El Portalon seem to be masters at finding ways to reconfigure everyone’s favourites to make new favourites. This Crema Catalana is sublime.

A cigar of orange infused crema is concealed under a quenelle of homemade orange sorbet. An aromatic frill of orange sponge bread decorated with shards of wafer-thin merengue and slices of Valrhona chocolate dipped candied orange peel finish off the dish. Taking what is sometimes a richly stodgy dessert, El Portalon transforms it into something feather light and extremely pretty.
