The majority of fish served at Es Jardins de Fruitera are caught between Ibiza and Formentera for the ultimate in freshness, and the John Dory is given a quick fry before popping it in the oven with onion, pepper, tomato, garlic and white wine to cook slowly in its juices. The dish is garnished with fresh veggies and those more-ish potatoes fried in onions, peppers and garlic, called ‘patatas a la pobre’.
