Ibiza restaurants: Roasted John Dory at Es Jardins de Fruitera
Sourcing the highest quality catch of the day is top priority at Es Jardins de Fruitera, as the Roig family now surpass the standards they set at their original restaurant Yemanja, loved for its flake in the mouth fresh fish, served grilled, roasted, stewed or in bullits – a deliciously soupy rice.
The majority of fish served at Es Jardins de Fruitera are caught between Ibiza and Formentera for the ultimate in freshness, and the John Dory is given a quick fry before popping it in the oven with onion, pepper, tomato, garlic and white wine to cook slowly in its juices. The dish is garnished with fresh veggies and those more-ish potatoes fried in onions, peppers and garlic, called ‘patatas a la pobre’. Try the spinach salad or tibia to start to maximise your dining experience.
