Ibiza restaurants: Roast Suckling Pig at Es Jardins de Fruitera

The family team at Es Jardins de Fruitera are always keeping an eye on their suppliers for the best products possible, and mix traditional and modern cooking techniques to create their famous meat dishes.

The impressive suckling pig is stuffed with an Ibicenco herb bag containing thyme, rosemary, garlic and oil and cooked overnight for 14 hours at 174 degrees to give the meat its amazing texture. It is cooked in the oven to make it crispy, resulting in the incredibly tender meat with a tantalising crispy skin. Finally the juices and herbs are simmered and reduced to make a mouth-watering sauce, and the dish comes garnished with finca fresh vegetables.
