New cuisine concept: FAY Restaurant at Cotton Beach Club
Cotton Beach Club owners Christian and Merete Marstrander create concepts from the heart. The beach club was inspired by their own desire to go back to a time when Mediterranean beach clubs were truly chic and sophisticated, without over-the-top house music and DJs or too many people per square metre – think the 50s and the 60s in France and Italy. Where the food and the wine is the focal point… though we have to admit, they are blessed with some spectacular views too.
For the beach club’s second season, the couple turned their attention to the breathtaking rooftop space, transforming it from a sunset viewing deck and lounge bar into a refined, sleek and sophisticated Asian-themed restaurant – opening daily for lunch and dinner with unparalleled views over the turquoise Mediterranean Sea. The space has been redesigned to incorporate stylish round dining settings and long, white wooden communal tables – complete with ‘lazy Susan’ centrepieces ideal for spinning and sharing plates – plus a bar and lounge area, a standout pink pool table and DJ booth.
Sleek and sophisticated it may be, but FAY Restaurant is for everybody, with diners welcome to come straight from the beach to the roof for lunch and experience the personalised service that isn’t all just airs and graces. Most importantly, FAY is all about simply sensational cuisine, filling a gap in the market when it comes to high-end Asian menus. This dedication to the art of Asian cooking included sending a crack team of chefs to the best schools in Thailand, employing specialists in their field such as a dedicated sashimi slicer, researching techniques and ingredients in some of the world’s best restaurants including Nobu, Hakkasan and Zuma, building new kitchen spaces and sourcing the finest fresh produce on offer.
As opposed to some Asian restaurants, where the menu selection extends to around 90 dishes, FAY Restaurant has streamlined its menu to include only the very best options, revering quality over quantity. That’s not to say you’re not spoilt for choice – the menu includes an array of incredible sushi rolls and that expertly sliced sashimi, traditional and fusion flavoured soups, fresh and zesty salads, classic curries with a strong focus on vegetarian versions and a seafood selection presented in a variety of ways, from spring rolls and ceviche to stuffed squid, tartar and tataki among others. Meat lovers won’t be able to resist the melt-in-your-mouth hoisin sirloin, Peking duck, the signature FAY orange chicken and Japanese mini-burgers – quite simply, there is something for everyone and that’s before you’ve even seen the desserts!
As is custom in Asia, dishes are designed to be shared. Rather than opt for a starter, main and dessert, FAY guests are encouraged to build their own dream menu – a fun, social way of dining that also avoids any cases of ‘food envy’ at the table. The wine list at Cotton Beach Club is one of the most advanced on the island and your waiter can assist in finding the perfect drop to accompany your feast.
FAY Restaurant is open for two shaded lunch seatings per day – 1pm and 4pm – and then dinner from 8pm (the restaurant’s kitchen remains open until midnight), when you can also witness the spectacular view of the sun setting over Cala Tarida. Resident DJs spin the perfect blend of chilled beats and deep house, setting an ambience unlike any other beach bar or club, and after dinner, perusing the list of vintage and classic cocktails is the perfect way to end your evening.
