Ibiza restaurants: Dek Tartare at Il Decanter

With a Michelin-starred chef at its helm it should come as no surprise that at Il Decanter, a new addition to the restaurant scene in the heart of Ibiza town, dishes are served with a twist. And while ‘deconstructed’ is a word that gets bandied around a lot to describe cuisine, this is exactly what you get with the restaurant’s Dek Tartare.

The centrepiece of this dish is of course, the beef – in this instance, ‘limosine sirloin’ that’s been grass-fed, meaning it packs a punch in the flavour stakes. Then, perfect little piles of accompaniment surround it. There are anchovies, capers, a tomato confit, bittersweet onions caramelised in sugar and balsamic vinegar, a parmesan cream, cheese fondue and marinated egg yolks that have been cooked for eight hours with a texture that will surprise and delight. The idea is you can pick and choose each bite until your discover the perfect mouthful – the ingredients and the rest is up to you.
