Ibiza restaurants: Fish & Seafood Assiette at IT Ibiza

With its delicate placement of fresh fish and shellfish plus colourful dashes of fragrant cream, IT Ibiza’s fish and seafood assiette has been deservedly likened to a work of art. However, this is not something to be adored from afar. Rather, guests are invited to delve in and experience the culinary masterpiece with all of their senses from the bustling frontline location in Marina Botafoch.

Created with fresh fish such as tuna, sea bass, red mullet, red prawns and sea urchins – the combination changes daily in line with the morning’s catch – the flavoursome dish is balanced with either tuna or sea bass tartare plus a homemade sauce of fermented anchovies, orange and lime zest.

A splash of colour comes courtesy of the trio of fresh, fragrant puree; sweet mango, light, soft Chinese mandarin and deep, rich beetroot, adding a final vibrant tone is the basil coulis. Flown from Genoa in Italy and famed for its delicate scent, the basil seeds are sown and tended to in head chef Massimo Larosa’s very own garden, before creating the final masterstroke to this art piece.
