Ibiza restaurants: Roasted Rack of Lamb at IT Ibiza
When a passionate Italian chef tells you one of his signature dishes was inspired by his mother’s cherished recipe, you just know it’s going to be a memorable dining experience. At IT Ibiza, the Italian fine dining restaurant in Marina Botafoch, chef Massimo Larosa’s tribute to his mama’s spring lamb could perhaps be called a masterpiece as the creative genius adds his own uniquely surprising twist on tradition, turning into art on a plate.
Tender lamb is slow roasted for nine hours and served atop creamed peas with a dash of jus, offset with fresh artichokes roasted with a hint of lemon, a delicately crafted potato ‘flower’ and teensy garnishes of chocolate that tie the entire dish together. This is southern Italian cooking, haute cuisine style, right here in Ibiza. A must-try on any foodie’s hit list.
