Ibiza restaurants: Rack of Lamb at La Dispensa

In Ibiza, there is lamb. A lot of lamb. Delicious, succulent farm-raised lamb. And then there is the rack of lamb at hip new Dalt Vila eatery La Dispensa. This rack of lamb is unlike any other on the island – melt-in-your-mouth sweet meat contrasted with a savoury, crispy fresh herb crust.

Served with a side of pont neuf potatoes and grilled Mediterranean vegetables, the dish is hearty and healthy at the same time. The Provencal herbs used in the crust are easily identified on each mouthful – rosemary, oregano, thyme, bay leaves, mint and marjoram, fused with thick, flakes of Ibiza sea salt – and create an unforgettable taste sensation, perfectly complemented by the fresh tasting vegetables, drizzled in local olive oil.
