Wild Sea Bass in Salt at La Escollera

A Catalan classic is given the La Escollera five star treatment, as this amazing sea bass dish is prepared from another of Yaya‘s (Catalan for grandma) traditional recipes. Plucked straight from the sea daily, it is delivered fresh to La Escollera then rolled in a crust of coarse sea-salt from the local salt-flats of Salinas and baked in the oven, then filleted perfectly and presented with a selection of delicious vegetables.
