Conventional ingredients such as ripe avocados, the juice of a fresh lime, cracked salt and pepper plus chilli are combined in such a way that the result is a fluffy, creamy and light dip. Taking the traditional appetiser to higher levels is the addition of black squid ink that creates a rich flavour and a deep, beautiful ebony colour in appearance. Served up with a generous portion of corn tortillas and a few skewered sardines stuffed with delicious salsa verdê – it’s the perfect starter to pass around at the table before you move onto to mains.
