Ibiza restaurants: Beef Sirloin at La Veranda

This dish will no doubt go down in the La Veranda books of signature dishes. If it isn’t there already, it should be. Two slices of the most tender beef sirloin sit elegantly on a dark, misshapen ceramic plate. Three petit Jerusalem artichokes stand guard, stuffed with a creamy filling and sit on a bed of homemade kimchi. Delicate, velvety slices of foie gras crown the steaks, adding a buttery decadence to the already deeply rich dish.

The combination of favourite European flavours – foie, sirloin, artichoke – with the tart spice of the Korean kimchi is pure gustatory genius and provides just enough respite from the richness of the other ingredients to provoke spasms of joy.
