Ibiza restaurants: Chicken al Mattone at Locals Only

A traditional Italian dish, Chicken al Mattone literally translates to ‘chicken with a brick’, however at stylish Ibiza restaurant Locals Only, you can rest assured all bricks are left in the oven and you’re simply served the crispiest, most tender and tasty chicken on the island.

Marinated in herbs and garlic, the chicken is pulled apart and broken down, so it can be shared in typical Italian family style before being placed on a hot brick in the wood fired oven. Another hot brick is placed atop the chicken pieces, speeding up the cooking process as it slightly flattens the pieces, heating them from both top and bottom. Best served with a side of garlic sautéed chard and an icy cold beer!
