Ibiza restaurants: Palometa Melon at NOBU

Hot summer days call for fresh, light dishes and the experts in the kitchen at NOBU are maestros when it comes to creating such dishes. Here in Ibiza, at the Talamanca outpost of the famous fine dining destination – within the stunning Nobu Hotel Ibiza Bay – the Palometa Melon flies out of the kitchen daily, thanks to its perfect combination of freshness and flavour.

Freshly caught palometa is finely fileted, before being house-cured in salt and then marinated in mezcal and silky extra virgin olive oil. Each slice of palometa is then delicately wrapped around a small chunk of white melon before being drizzled in Yuzu lemon and olive oil. A spicy homemade Aji tomato salsa, soy and chopped chives complete this pretty as a picture dish – an ultra creative twist on the traditional Spanish ham and melon style starter.
