Ibiza restaurants: Wild Sea Bass at Salvia

The in-house restaurant at boutique Ibiza hotel Ca Na Xica has been a client’s secret for many a year, however in 2017 the owners have decided to open the space up to one and all. When the food is this good, it would be a shame not to tell the world! Chef Sergio Zubiadut, hailing from Galicia, has devised an extensive modern Mediterranean menu – based around the concept of slow cooking – and the focus is on using the highest quality produce possible. There’s no finer example than this wild, line-caught sea bass.

Fish so fresh it may have been caught the very morning you eat it is slow-cooked in the Josper oven, then drizzled in a classic red wine sauce. Not just any red wine, but the best Spanish drop hailing from Ribera del Duero! Served atop roasted strips of yucca and alongside homemade, healthy sweet potato gnocchi, the dish is at once full of flavour and yet light and healthy – perfect for a hot Ibiza summer night.
