Ibiza restaurants: Ratatouille at The Giri Café
The farm to table ethos at famed San Juan eatery The Giri Café really takes centre stage in the restaurant’s take on Ratatouille. Each and every ingredient within the vegetarian dish is grown onsite – courgette, aubergine, fresh tomato and basil are wrapped into a flower shape before being roasted and topped with homemade sun-dried tomato pesto, basil, olive oil and a sprinkling of salt.
Forget the idea that ratatouille is a few chopped veggies cooked in tomato and served as a side dish – this plate is almost like a work of art, and the portion size makes it a hearty main meal for anyone who’s worked up an appetite. Alternatively, it could make a wonderful side dish to share between a big table looking for an extra dose of homemade goodness.
