Ibiza restaurants: Slow-Cooked Lamb at The Giri Café

Ibiza is famous for its delicious spring and early summer lamb and The Giri Café in San Juan should be equally as famous for its take on the produce. Taking a 330-gram shoulder of local lamb and slow roasting it in the oven for 10 hours gives the meat a melt-in-your-mouth, almost buttery texture and it falls off the bone when you touch it.

Served with roasted cubes of pumpkin, sweet pillows of plum puree and coated in a deliciously sweet salsa with just a hint of complementary smokiness, the combination of tastes and textures are quite simply sublime in this dish. Sweet, edible garlic flowers and zingy pomegranate seeds are sprinkled over the top in the finishing flourish and the result is a dish that is a-l-m-o-s-t too beautiful to eat.
