Ibiza restaurants: The View – Top Ibiza breakfast spots

There’s something special about a hotel breakfast. For those who travel often, it can be somewhat of a comfort; for those who travel less frequently, it’s more of a treat. Here in Ibiza, the all-new Seven Pines Resort Ibiza offers the hotel breakfast to end all hotel breakfasts – and the good news is, you don’t have to be a guest to partake in its culinary offerings. Breakfast is served overlooking Es Vedra in The View restaurant, from 8am until midday and in addition to a high-end, artisanal buffet, the à la carte menu is brimming with classics and house specialties that make it easy to imagine dining there seven days a week.

For those who like to start their day on a healthy tip, the Amaranth Porridge – made with organic seeds in coconut milk, fresh berries, coconut flakes and soya yoghurt – ticks all the right boxes. Alternatively, try the Passionfruit and Coconut dish, where stirred coconut yoghurt is complemented with fresh raspberries, lemongrass, cinnamon and clementine oats. If you’re leaning the other way, and thinking a holiday is the perfect excuse to start the day with a sweet treat, The View also offers an impressive cake-like French Toast made with caramelised French brioche and served with whipped ricotta and berry compote, plus pancakes or waffles with your choice of topping – banana, berries, white chocolate shavings or organic agave syrup.

As to be expected on any self-respecting breakfast menu, eggs also play a starring role at The View. For those who like to keep things simple, order up your fresh free range eggs ‘your way’ – be it fried, scrambled or poached, served with asparagus, a drizzle of olive oil and just the right amount of Parmesan shavings. Omelettes too, can be made to order, with a host of ingredients to choose from. Think bell peppers, Cheddar or Comté cheese, green chillies, onion, mushroom, tomato, ham or spinach – pick your favourite three and then wait for the perfectly flipped three-egg omelette to arrive at your table. Or for a luxe morning feast, the Omelette Aux Truffles is a classic three-egg omelette made with Comté cheese and grated black truffle – perfected by the kitchen team.

Egg enthusiasts know that perhaps the best way to judge a hotel on its breakfast standards is via its Eggs Benedict and Seven Pines Resort Ibiza come up trumps in this department. A toasted fennel brioche is topped with either sliced ham or smoked salmon, before perfectly poached eggs are delicately placed on top and homemade Espelette Hollandaise is poured over with a flourish. The restaurant’s must-try egg dish is without a doubt the Signature Shakshouka – the traditional North African dish of free range eggs poached in tomato sauce is given a twist with onions, sweet dry chilli, satay spice, cracked coriander and served with a savoury Zaatar crisp.

There is one decadent dish that truly outshines all other egg dishes on the menu: Eggs Royale – the crème de la crème of huevos in Ibiza. Two free range eggs are perfectly soft boiled, served with wilted spinach, steamed baby potato and 30 grans of luxurious Imperial Caviar, finished with a helping of crème fraiche and lemon confit. This dish is fit for an emperor rather than a king – and the price is reflective of this fact – but The View kitchen reports not a single order has ever been left unfinished, such is its flavour and flair.

Last but never, ever least on a hotel breakfast menu is the incredible buffet. Table upon table, plate upon plate, basket upon basket, tray upon tray, platter upon platter of un-ending deliciousness is on display (and up for grabs!) in the restaurant’s breezy interior space, where you can also watch your à la carte breakfast order being whipped up in the open kitchen space. Buttery French pastries, chunky loaves of bread (covering all dietary requirements) are complemented with the finest French butter and each table comes with its own set of Seven Pines Resort Ibiza jams – custom made for the hotel using unique recipes including a chocolate spread, peanut butter, red fruit marmalade, rhubarb and strawberry jam, passionfruit butter and more.

Fresh fruit is in abundance and all is organic and sourced locally where possible. Apples, plums, apricots, melon, pineapple, kiwi, dragonfruit, figs and passionfruit are just begging to be eaten, alongside an impressive array of yoghurts, cereals, nuts, berries, dried fruits and seeds. All the cereal and muesli you could ever dream of is in beautifully coloured ceramic bowls and a DIY salad bar consists of even more freshness, colour and health-giving flavours, wit a selection of delicious homemade dressings also available.

The hot buffet is where any carnivore will come into their own, with a huge variety of bacon and sausages – including a bespoke Seven Pines sausage and all the best local chorizo – on offer beside chunky mushrooms. As we are in Spain, a variety of cured meats is on offer alongside smoked tuna and lubina, complemented of course by a selection of cheeses plus homemade confits, olives, pickled onions and capers. Needless to say… you won’t be going home hungry.
