Beets are finely shaved and marinated in the sous vide until tender before being filled with a exquisite cashew cheese made with spring onions, parsley, alfalfa, and lemon zest. A smear of yellow pepper puree and a smattering of black sesame and edible flowers finish of this beautiful plate – healthy, beautiful and delicious!
