When it comes to fine dining, it’s a well established fact that lobster is the king of all ingredients. It’s that sweet, plump flesh you simply don’t get with other shellfish, and in the case of Zela Ibiza’s exquisite lobster ceviche, the fact that it’s been caught locally.
Alive with the essence of the Mediterranean, the lobster is marinated in Tiger’s Milk and then presented in its shell, alongside a little pot of additional Tiger’s Milk, should you wish to ramp up the spice. The sauce is prepared using an exact combination of lime juice, sliced onion, chilli, salt and pepper – and the secret ingredient in this instance? Yellow garlic added by the chef, who says this is what really makes the flavour of the lobster pop.
