Ibiza restaurants: The Butcher
Haute cuisine burgers
Award-winning burger bar The Butcher has finally flung open its doors in Ibiza. Hot on the heels of five successful outposts across Amsterdam and Berlin, the restaurant’s ethos is to draw a savvy European crowd with a penchant for hedonism and haute cuisine burgers of the highest calibre.
Located on the ground floor of five-star hotel Sir Joan – a tribute to urban cosmopolitanism overlooking Ibiza Marina – but with its own private entrance, The Butcher is open daily from 12 noon until 8am, making it the ideal place for a pre-party fuel-up, or après-clubbing wind down, and everything in between of course.
The interior is small but impactful, with sleek stainless surfaces and stools for perching on while you eat; outside on the decked terrace there are communal benches shaded by cream-coloured canopies for socialising and sheltering from the midday sun. The atmosphere is fun, but relaxed – the embodiment of quintessential Ibiza spirit.
The menu includes a range of lovingly crafted fresh burgers, and while there are indeed vegetarian options, Aberdeen Angus beef is the star ingredient. Served inside a homemade brioche bun and accompanied signature sauce, try it alongside crispy, sweet potato fries, raw salad and an indulgent boozy milkshake. Precisely how burgers should be done.
