Ibiza’s gastronomy scene has been been buzzing since the launch of the all-new Vi Cool by Sergi Arola restaurant launch on the stunning rooftop of Aguas de Ibiza Lifestyle & Spa in 2014. Guests enter via a separate entrance to the hotel, with a lift that whizzes you straight up to the roof where the view and the food alike are nothing short of sensational!
The Spanish celebrity chef – with one Michelin stars to his name and successful restaurants all around the world – has joined forces with the five-star eco-resort to offer visiting foodies the opportunity to dine in true Ibiza style, in the open-air and in a relaxed ambience.
The high-glam Vi Cool Ibiza rooftop space is separated into two areas, open from 10.30am until 2am daily – the poolside, casual lounge area, where you can snack, sunbathe, swim and chill out; and the more formal dining area – a sophisticated setting with the distinctive Aguas de Ibiza Lifestyle & Spa five-star feel.
Artfully presented, Sergi Arola’s informal modern tapas menu is designed to share. Depending on your appetite, opt for a light bite or order an array of plates, such as Arola’s Bravas, Coca pizza or deep-fried prawns with curry and mint. Arola has also devised exclusive ‘Mediterranean Cocktails’ to match the exquisite flavours of the menu, while mixologist Ivan Talens has expertly curated a cocktail list of the highest international standards.
