When Cotton Beach Club Ibiza co-owner Christian Marstrander was putting together a brief for the 2014 restaurant menu, he knew he wanted a cod dish that was extra special… but given that black cod is on the menu in practically every restaurant on the island, he knew it had to be different. Over the course of four months of tasting and trying, he and head chef Marcelo Eufrosino Rodrigues eventually found a cod dish that was j-u-u-s-t right – a lush filet stuffed with tiger prawns and drenched in a homemade, bespoke orange sauce.

We can’t go past a serving of falafels – perfectly crisp on the outside and tender on the inside, topped with a tangy dressing and coriander. Perfect for sharing… but do you really want to?
The extensive menu at beautiful new Playa den Bossa restaurant BEACHOUSE Ibiza offers something to suit all tastebuds, and lovers of fresh, healthy produce and vegetarians alike will adore the selections of salads. Our favourite is the Greens & Ricotta – a crispy, flavourful bowl chock-full of nature’s goodness, including lava beans, green peas, French beans, asparagus and avocado, topped with creamy-yet-light Sicilian ricotta. It’s like summer in a bowl!
Keeping things light and summery on his menu for summer 2014, renowned head chef Tim Payne of Sands Ibiza fuses the flavours of the Mediterranean with modern flare, opting for locally sourced products and ingredients wherever possible. Beautifully presented, the whole sea bass – grilled to perfection ‘a la plancha’ – is a long-time beach favourite that has been given the Sands Ibiza twist – served up with citrus fruits and saffron potatoes then drizzled with a zingy, zesty sauce of orange, olive oil and coriander.
Adding an exotic touch to the Mediterranean menu at Atzaro restaurant La Veranda Night Restaurant, are these deliciously marinated, milk-fed New Zealand lamb cutlets. With a Moroccan flavour, and served atop couscous and grilled baby root vegetables straight from the Atzaro garden, the taste is light and fresh, made even more delicious with a hint of mint sauce drizzled over the top!

The oven baked aubergine is brushed with a secret mixture of herbs and spices, topped with a mouth watering mixture of bulgur, green olives, herbs and almonds then drizzled with creamy yoghurt, creating a nice and light summer dish – Passion are passionate for aubergines!

Fusing the Cotton Beach Club owners’ Norwegian heritage with a little Peruvian and Nikkei style cuisine, head chef Marcelo Eufrosino Rodrigues has created a mouth-wateringly good salmon ceviche, marinated in passionfruit, lime, onion, coriander and just a little hint of spice, then served with the chef’s signature passionfruit salsa drizzled on top. if you only try one ceviche in Ibiza this summer, make it this one!
