A quest for perfection – Tsuma Ibiza

Good things come to those who wait. Patience is a virtue. Work hard, be kind, and amazing things will happen. These phrases truly sum up the journey that led Polish power couple, Magdalena Kasprzyk and Piotr Perzynski, to launch Tsuma Ibiza – a high-end, year-round sushi hotspot near Ibiza town. Within a year of opening its glamorous doors, the fine dining destination has become synonymous with the finest sushi, sashimi, sake and caviar this side of Tokyo, and boasts a well-deserved reputation among discerning island foodies, one the duo is extremely proud of.

The road to Tsuma Ibiza began in Poland, where Magdalena and Piotr met at university, while studying to become engineers. Life seemed certain, until a fateful holiday overseas saw Piotr develop a fascination for the art of sushi. Suddenly, a new world opened up – one that could take the couple all over the world. University degree completed, Piotr broke the mould to follow his new passion for Japanese cuisine and began working in a sushi restaurant. To an outsider, this may have looked like a risky decision, but to Piotr and Magdalena, it was a new horizon.

First stop: London, where Piotr had been offered a 12-hour trial shift in a renowned Japanese restaurant. Dropping everything and flying across the continent, the trial was a success, prompting a rapid move to London to undergo the strict training required of a classical sushi chef. Magdalena joined him a few months later to embark on her own journey of Japanese discovery – achieving the highest level of sake sommelier qualification attainable. A stint in Manchester followed as the duo finessed their skills, however the weather was less-than-enjoyable – sunshine was calling. Tenerife came next, and then Mediterranean island of Ibiza came into the conversation.

Magdalena and Piotr boarded a plane to Ibiza in 2017 with a small amount of luggage and huge dreams, although it would be some time before Tsuma Ibiza would materialise. By day, they pounded the pavements seeking work and accommodation, and by night, they slept in hostels, while waiting for the right opportunities to arise. Piotr’s perseverance and persistence landed him a coveted sushi chef position in an A-list destination, and a turning point came the night Magdalena spent all night contemplating life and the future on a bench in Vara de Rey. “We have always been optimistic,” she says. “But with only one of us employed, it was starting to feel like we might have to go back to Poland. Then, I got a call offering me a job in a restaurant – finally, we were on our way.”

Winters were spent honing their skills in five-star hotels in the UK and running a successful sushi restaurant in St Barths while summers saw them rise through the ranks of the island’s culinary scene, mastering their language skills in addition to restaurant management, front-of-house prowess and seeking out the best suppliers in the industry. The entrepreneurial seeds for Tsuma Ibiza were being sown – then along came the pandemic. “Opening a restaurant was always our dream,” says Magdalena. “At this point, the thoughts became louder. We had so much time to think, to put pen to paper. We drove all around England, talking, planning, dreaming. Listening to a lot of music. And making a lot of notes.”

A plan was emerging, even without a premises. “Ibiza made sense,” says Magdalena. “We love the sun. We needed the positive energy. Ibiza is a place where people don’t just work to live, they really live and pursue their passions.” The island’s proximity to Poland was also a plus, and the final clincher was its abundant nature. “We came with a little car packed full of stuff,” remembers Magdalena. “We were ready to go. We hadn’t wasted any time in Poland. We’d already bought custom-designed furniture that accommodates the right amount of sushi plates, chopsticks, glasses and menus, we had menus and logos ready – we were in the thick of it all, even without a locale.”

Tsuma Ibiza initially began life as a catering company for private villas and events. “Step by step, we were building up our future clientele,” recalls Magdalena. “We had so much positive feedback which was beautiful. We loved being able to talk with people in an intimate atmosphere, explaining the food and sharing stories about sake. Our vision was always super clear. We wanted to bring high quality, classic Japanese cuisine to Ibiza – not just sushi.” They found the location that was just right at the beginning of 2022 – a new-build on the outskirts of a residential area near Ibiza town, where they could design and build the restaurant of their dreams from the ground up.

Their engineering backgrounds gave Piotr and Magdalena an advantage when deciding on kitchen, storage and interior layouts, the locations of fittings and much more, but it was the hands-on painting, fitting drywall, and building the stunning bar that forms the centrepiece of Tsuma Ibiza that truly imprinted their DNA throughout the beautiful space. Within just six months, the building husk was transformed into the chic restaurant you see today, where Magdalena’s own photography lines the wall, urban design elements contrast with industrial fittings and emerald-green velvet curtains and chairs add a touch of high-glamour to it all.

Piotr’s respect for tradition combined with a flair for contemporary Ibiza fine dining is what makes diners return to Tsuma Ibiza time after time. Every flavour combination is complementary – no one ingredient ever overpowers another. Take the pairing of truffles or Parmigiano Reggiano with silky sashimi; the squid with black sea salt boasting endless umami; or the shrimp tempura teamed with matcha – combinations that fascinate diners, who get to watch Piotr prepare their cuisine across the open bar. “I love when people start by ordering a classic, then let us recommend something and say: ‘Wow, I didn’t expect that to be so good!’” says Piotr. “That’s the ultimate compliment.”

Absolutely every dish is made fresh to order, using traditional methods gleaned from the Japanese chefs he trained with, and 97 of the products used at Tsuma Ibiza come directly from Japan to guarantee authenticity. “Quality, timing and temperature are key,” Piotr says, referencing fish, shellfish, Wagyu, rice and caviar – specifically, Antonius CaviarTsuma Ibiza is the brand’s exclusive Balearic distributor, supplying restaurants, hotels and villas across the islands. Piotr first encountered the company while working in London, impressed by its exceptionally smooth and clean taste. Upon visiting the farm, where Siberian sturgeon are bred in artisanal waters that are neutral in aromas, he felt a strong connection with the family behind the product. “They reminded us of ourselves in their pursuit of quality.”

The catering arm of Tsuma Ibiza continues to run, with sushi and sake pairings offered along with personalised caviar tastings, as a speciality. With over 20 sake flavour profiles in her portfolio, Magdalena is adept at easing newcomers into the world of fermented rice wine, whether in their homes or in the restaurant. “I start by asking for flavour preferences,” she explains. “If you like something light and fruity, perhaps you’ll like a ginjo style sake. If you prefer more full-bodied, you could try a classic, junmai sake. Some people ‘get it’ straight away – others take time. We start gentle!” Perfectionists by nature, they strive to elevate the experience as Tsuma Ibiza now enters its second year of business.

With Tsuma Ibiza, the couple have created a blissful and stylish air-conditioned reprieve from the summer heat and humidity; a respite from the autumn rain; and a cosy haven in the wintertime with the sounds of vintage vinyl floating over the airwaves and a sophisticated ambience (plus convenient parking) that has won them a very loyal local clientele. “We know this is not a touristic location,” says Magdalena. “We have so many regulars, including other business owners, so when tourists discover us – which is more often lately – we know they are foodies. They’ve done their research. It’s nice to be recognised for our quality.”

Making an indelible mark in the kitchen at IT Ibiza in Marina Botafoch is Michelin-starred new executive chef Francesco Sodano.

When IT Ibiza first opened its stylish doors in Marina Botafoch in 2015, it quickly cemented its reputation as the place to be, night after night, all year round. Thanks to its combination of contemporary design, a frontline harbour setting with breath-taking views of Dalt Vila, world-class cuisine, impeccable service and a carefully curated soundtrack, the fine dining restaurant continually attracts discerning foodies from across the globe, cosmopolitan jetsetters and in-the-know island residents. Eventually, the IT experience became so in-demand that the brand expanded into five additional style-setting locations: London, Milan, Tulum, Mykonos and Porto Cervo.

The flagship outpost in Ibiza remains the jewel in the crown of the IT Restaurants empire, and this season sees it raise the gastronomic stakes as Italian-born, Michelin-starred chef Francesco Sodano joins the ranks as new executive chef – yet again, IT Ibiza is the talk of the island. This exciting new hire is further proof that the restaurant takes its position in the Ibiza culinary world seriously – rather than rest on its well-established laurels, the team are always evolving, relentlessly striving for excellence, and forever seeking to give their customers an unforgettable experience and even more reasons to return.

Hailing from the Campania region in southern Italy, Sodano grew up in a family of foodies, restaurateurs and chefs, and spent years spent traversing Italy perfecting his craft in high-end restaurants of Sorrento, the Amalfi Coast and Rome to gain experience in specialities such as molecular gastronomy, sous vide, baking and pastry. He credits his mentor, the famed Michelin-starred chef Anthony Genovese of two-starred restaurant Il Pagliaccio, with developing his management skills while working alongside the legendary Pierfranco Ferrara in the same kitchen.

Before being lured to the white isle in 2023 by IT Ibiza, Sodano took on high-level roles at the renowned Nikita Malibu in Los Angeles, Quattro Passi in London’s Green Park, Annabel’s in Mayfair and the award-winning Enoteca Turiin Sloane Square. It was on his return to Italy that Sodano was awarded his first Michelin star, during his tenure at Il Faro de Capo d’Orso Maiori in Salerno. Here, he also received three Cappelli from Guida L’Espresso (the Italian equivalent of the Michelin Guide) and many other accolades that made him one of the most in-demand chefs in Europe.

With much respect to his homeland and IT Ibiza’s culinary roots, Sodano’s new menu plays tribute to Italy, the Mediterranean and Ibiza.

Sodano’s creative new à la carte menu elevates the IT Ibiza fine dining experience to new heights. Constantly innovating, he works with varied techniques such as smoking, fermentation and oxidation, while always allowing authentic flavours to shine. Take the IT Fish Market menu for example, where the purity of raw carabineros, plump red Ibiza prawns or Gillardeau oysters need little in the way of enhancement – although Caviar Beluga Giaveri is the perfect accompaniment. Delicate carpaccios and tartares are perfect for sharing on hot summer nights – the smoked amberjack carpaccio with pickled vegetables and josper mayonnaise is a standout, as is the savoury twist on Mediterranean bluefin tuna tartare with tomato foam, capers and olives.

Lovers of classic Italian cuisine will find it hard to bypass the crunchy aubergine parmigiana, while eagle-eyed foodies will spy the meunière baby squid with sautéed glasswort or the josper artichoke with free-range local egg, potato mousse and summer truffle as must-try starters. An extensive pasta menu is an ode to Sodano’s homeland – and IT Ibizas heritage – ranging from the classic (and exceptional) spaghetti pomodoro and basil to the more decadent linguine with sea urchins and caviar. Fresh off the charcoal grill are dishes like the mighty tomahawk steak, a juicy Angus ribeye, giant langoustines and either Balearic or blue lobster, plus the fresh catch of the day.

The chef’s passion for pastry and baking is evident on the dessert card, with a tropical-inspired (and gluten-free) coconut mousse with mango and passionfruit sitting alongside the seriously addictive banana split and bourbon pie; or the mouthwatering hazelnut ingot. With this innovative new menu and an ambitious new chef (Sodano makes no secret of his desire to earn more Michelin stars in the not-too-distant future) in their arsenal, there’s no doubt IT Ibiza is one of the island’s hottest culinary addresses right now.

And speaking of addresses – the restaurant’s harbourside location is undoubtedly the best place in Ibiza to take in unparalleled views of the jaw-dropping St Ciriac fireworks display this Tuesday night (August 08, 2023) – reservations are essential to experience sparks flying in both the kitchen and the sky. The annual event celebrating the patron saint of Ibiza culminates at midnight, when the sky above Dalt Vila is illuminated with thousands of colourful and creative fireworks. Front row seats at IT Ibiza are the perfect place to enjoy the spectacle with a glass of Champagne, fine wine or a cocktail, and the ideal way to wrap up a sumptuous summer feast.

Living la dolce vita – Amalur

From the very first moment Anita Ekberg and Marcello Mastroianni were projected taking a midnight dip in Rome’s iconic Trevi Fountain in Fellini’s 1960 masterpiece, La Dolce Vita, people around the world have sought to pursue pleasure by emulating the Italian way of life. In Ibiza, there is no place that captures the essence of the sweet life more than Amalur, the revered Italian fine dining destination set in the bucolic Santa Gertrudis countryside.

This summer sees Francesco Manzoli – the renowned restaurateur behind Amalur’s noteworthy transformation over the past few years – elevates the restaurant’s elegance even further with the addition of a breath-taking garden terrace to its blue-hued finca setting. A vision beneath maroon-striped parasols that evoke the glamour of clifftop Italian five-star hotels and luxurious beach clubs, this new scene set by Manzoli is as beautiful as any of the nostalgic settings in Fellini’s extraordinary film. Natural stone paving intertwined with soft tufts of grass creates a timeless setting while the stylish, organic fencing created by using a ring of tall Mediterranean trees gives the feeling of total privacy and discretion. Unlike La Dolce Vita, there are no prying eyes or paparazzi to be found here – one of the elements that makes Amalur so popular with the visiting cognoscenti and island glitterati.

Pretty green and maroon mosaic tiled tables are complemented with contemporary wicker seating, glistening metallic tableware and sparkling crystal glasses. The feeling is both pared-back yet sophisticated, relaxed and yet glamorous, all at the same time, as you take your seat beneath the Balearic sky and begin your evening in the Amalur garden with a sunset cocktail. Brand-new signature cocktails have been added to the menu to coincide with the opening of the garden terrace – a mix of flavours that are perfect for alfresco celebrations and romantic summer nights alike.

Start with a Trini Tiki Mojito, a zesty blend of rum, lime, cardamom and Angostura Bitters, or sip on a refreshing Alcapone, made with summery gin, mint, lime, cucumber and ginger. The Vodka Soda is a high-society version of the classic, given an upgrade with jasmine and lime while the Dirty Mule is a must-try for lovers of mezcal, fusing its smokiness with lime, ginger beer and a dash of olive brine. There are old favourites too, of course – a Champagne Spritz, the French 75, a Margarita and the Amalur favourite, Vodka Grey, a martini-style cocktail made with Earl Grey tea and pink pepper.

As the sun goes down over the garden, witness the gorgeous golden light softly transforming into shades of pink, peach, crimson and violet before turning dark to reveal the twinkling of the stars and moon in the sky above. Now, it’s time to turn thoughts to dinner and this is where Amalur really excels in channelling la dolce vita. The menu – with an intro handwritten by Manzoli himself – is an ode to Italy with an Ibiza twist, flecked with international flavours and made with the freshest local ingredients. From the finest cuts of meat, freshly caught fish and seafood, plus vegetables plucked straight from Ibiza’s rich, red earth – with a select few ingredients flown in from the motherland – each and every meal at Amalur is a special occasion.

Chef Antonio Boriello’s new à la carte menu follows a decadent four-course style that allows you to really settle in for an entire evening of epicurean delights. There’s no reason to hurry – start by perusing the all-new raw menu, which includes the seriously impressive shellfish and seafood plateau to share, or take your pick from delicacies like Siberian caviar, carabineros, razor clams, baby scallops, oysters and more. Turn your attention to the starters, where the farm-fresh zucchini tartare with tomato, pine nuts and Parmesan vies for attention against cuttlefish carpaccio with Bottarga; a classic Vitello Tonnato; oysters served ceviche-style and the now-famous Amalur sea bass tartare toast with caviar.

First courses showcases the delicate pasta made in-house daily, and the flavour-bomb gnocchetti with red prawns, lemon and cherry tomato is hard to beat – that is, unless you’re tempted by the egg tagliolini with caviar and chives. Purists will love the ‘gentile’ paccheri with fresh red and yellow tomatoes and basil, while those who like to push the culinary boundaries should try the Amalur twist on Cacio Pepe – homemade tortelli, Gricia-style, stuffed with Caciocavallo cheese, black pepper and guanciale from Amatrice. Save room for second courses such as the spiniata – thinly sliced beef with wild sage, laurel and rosemary; the succulent sea bass fillet with rock clams and yellow tomatoes; or the Mediterranean red tuna tagliata with Sicilian caponata.

The sweet life continues well into the night, as Manzoli’s carefully curated soundtrack floats over the airwaves along with the chatter and laughter of the beautiful people of Ibiza. Speaking of sweet, no evening at Amalur is complete without sharing a table-full of desserts, and the new coconut tacos with two types of chocolate and the classic tiramisu are ideal for teaming with a selection of homemade ice creams, including a fresh lemon and mint that tastes like Dolce & Gabbana on a plate.

Irresistible moments – MAINE Ibiza

Every summer, hundreds of flamingos flock to the salt flats of Las Salinas, a UNESCO World Heritage Listed Site and national park on Ibiza’s unspoilt southern coast. The long-legged birds settle in to roost during the warmer months and the pink-flecked parade that ensues is a spectacle for all to admire. Nearby, opposite the small church of Sant Francesc de S’Estany, visitors of a different kind are also arriving in scores. These ones, however, are making haste for MAINE Ibiza, the first Balearic outpost of the internationally lauded restaurant brand, where the promise of subtly extravagant celebrations and fabulous food is proving irresistible.

Housed within a restored 18th century finca overlooking the geometric salt pans and the flamingos’ temporary homes, the Ibiza fine dining destination settles into the tranquility of the surrounding landscape with ease. Inside the whitewashed parocchia (parish), MAINE Ibiza founder Joey Ghazal has dotted the space with Colonial-inspired vintage pieces sourced from mainland Spain and juxtaposed them with nods to Spanish Brutalism and monastic minimalism, adding a contemporary touch to an authentic Ibiza scene. Simple and inspired by the principles of wabi-sabi, guests are encouraged to accept imperfections as intrinsic to beauty.

Outside at MAINE Ibiza, the same principles apply. The plentiful gardens have been curated as an extension of the picturesque scene, while the stylishly decked dining terrace offers the perfect amount of light and shade. Up on the mezzanine, views abound — first taking in the salty pools of ‘white gold’ once so intrinsic to Ibiza’s past, then heading out towards the Mediterranean Sea, which sparkles in the distance. At sunset, the salty waters glisten like a grid of mirrors, reflecting back the evolving colours of the skies above — it’s a vision worthy of an ice-cold cocktail with a collection of family and friends.

But first, food. Because that’s what MAINE Ibiza really excels in. Ingredients are carefully sourced, which means a deep sense of provenance plays a key role in every dish. MAINE Ibizas dedicated team of chefs have searched the globe for the very best produce, travelling to the small village of Villarrica in Chile to secure the most sensational cuts of Wagyu beef — shortlisted from over 28 varieties — and to La Rochelle in France to procure coveted Gillardeau oysters, so fleshy, delicate and time consuming to produce that they’re considered the Champagne of the oyster world.

That’s doesn’t mean Ibiza’s abundance of exceptional produce has been overlooked, of course, as MAINE Ibiza chefs have also called upon local farmers and fishermen to supply their kitchens with the finest ingredients from right here on the island. Organic vegetables are pulled directly from Ibiza’s rich soils and branches, and fish comes from the surroundings seas. The result is an array of menus, perfectly cooked, presented simply, and showcasing a carousel of Mediterranean and international flavours that explode across the tastebuds, while crucially, still reflecting a commitment to sustainability.

It’s a good idea to begin your culinary journey at the Raw Bar, where the low-key luxury of ingredient and expert preparation combined is palpable. Three varieties of freshly shucked oysters are available at MAINE Ibiza, each served with fermented jalapeño mignonette, while diners can also select from Baerii classic or Kaluga classic caviar, chosen specifically for their colour, firm form and smooth texture. Elsewhere, the refreshing sea bass ceviche with blood orange is colourful and delicious, and don’t miss the delectably fatty tuna belly; hand-dived scallops; or red shrimp crudo, with succulent prawns sourced from Formentera.

MAINE Ibiza is the perfect fine dining destination for a low-key but lavish celebration of life’s little moments.

For starters, a plethora of delectable options to suit every palate awaits. Starters include plump tomato carpaccio served with sumac, herbs, lemon juice, oregano, olive oil and of course, Ibiza salt; razor clams come with white wine, parsley, lemon and thyme; and spicy chorizo is served with clobbered cranberry mustard and a zesty lemon wedge. Other favourites at MAINE Ibiza include the crispy fish taco with pico de gallo, white cabbage and hot sauce, and the baked smoked Scamorza with truffles, oregano, rosemary honey and malt bread.

Moving to the mouth-watering main courses, and classics include tasty, blackened chicken with lemon-spiced yoghurt and tzatziki; angry lobster pasta, homemade with linguini, bottarga and spicy bisque; and roasted eggplant with tzatziki, garlic chips and radish cress. Fresh fish options include the local delicacy of salt-baked sea bass; grilled wild turbot; and luscious carabineros a la plancha, while meat aficionados will relish the sweetness of maple pork chops served with sticky rice; Black Angus filet mignon; and the bone-in rib-eye Wagyu steak served with a sumptuous selection of sides like charred cauliflower and lobster mash.

Food cravings satiated, MAINE Ibiza’s talented mixologists take the reins. Likened to las brujas de Ibiza (the witches of Ibiza), who were famed for brewing healing elixirs from hand-picked herbs and flowers, the team whisks up magical concoctions imbued with the restaurant’s ethos of seasonality and sustainability. Think hibiscus margaritas made with hibiscus-infused tequila, Cointreau and agave, and plenty of afterhours sours, made with bourbon, crème de cassis, rosemary and fresh pineapple juice. A premium menu of tequila and mezcal is also available, as well as a sommelier-picked selection of old world, new world, and biodynamic wines.

Day or night, dining dates at MAINE Ibiza are suffused with the same laid-back, lavish charm that’s been delighting the island’s devotees for decades. Culinary stars collide in Ibiza

It’s no longer a secret that winter in Ibiza is one of the most wondrous times to be on the island – just scroll through Instagram for proof of the glorious sunny weather, blissfully quiet beaches, cosmopolitan community, magical sunsets and more. When night falls however, those seeking high-level dining experiences and a social buzz need to know where to look and this winter, downtown darling Noja by Cotton Food Lab is the place to be. In January and February, the intimate and chic Japanese-Nordic restaurant teams up with celebrated chef Boris Buono and Ibiza Food Studio for the culinary collaboration of the year – and yes, we know the year has only just begun!

Like all the best meet-cutes, the Noja and Ibiza Food Studio relationship began with a random phone call. Buono, having shuttered his Sa Penya bolthole for winter renovations, was looking for a short-term space to set up shop. “I hate having to close for renovations,” he says. “So many of my faithful customers are year-round island people and I want to have something to offer them.” As he drove through the back streets of Ibiza town just a few weeks ago, he noticed a closed sign on the big wooden doors of Noja and gave Cotton Lifestyle Group impresario and Noja mastermind, Christian Marstrander, a spontaneous call to propose that Ibiza Food Studio move into the location for winter. Ever the creative thinker, Marstrander took the idea next level with a nonchalant: “Why don’t we just do a collab?”

Revered chef Boris Buono will be both hosting and cooking alongside the Ibiza Food Studio chefs and Noja sushi masters – a first in Ibiza’s culinary scene.

Over coffee, the duo nutted out the details and a new gastronomic alliance was born. Marstrander sees it as a happy accident that was probably meant to be. “We are both heavy foodies and both Scandi – I’m from Norway and Boris is from Denmark. We’re both year-round Ibiza residents and while we’ve visited each other’s places, we have never worked together.” The pair share a vision of service and quality, always striving to create – not just dishes but overall experiences for their clients. “There’s not a lot happening in Ibiza in winter,” says Marstrander. “This is something out of the ordinary, something very special we can offer during the quietest time of the year.” Plans came together very quickly and on Thursday January 12, 2023, Noja featuring Ibiza Food Studio opens its doors at 5pm for the opening night of its two-month run.

The dining experience features the new Noja á la carte menu and its omakase( chef’s choice) offering, with highly trained sushi masters slicing and dicing to order. Concurrently, the Ibiza Food Studio team – led by head chef Arno Hendriks – have crafted a bespoke menu that highlights quality local produce in their signature style. The Japanese-Nordic delights of Noja include minimalist red prawn makis, lush beetroot-marinated salmon nigiri, tuna toro or hamachi sashimi, plus blinis with caviar and Norwegian lompe alongside delectable sashimi tartars – a must-try for sushi lovers. Alternatively, diners can tuck into grilled calçots with chimichurri, Formentera langoustine ravioli, Terra Viva Ibiza organic chicken (the first island-produced, certified organic meat), line-caught fish of the day and creative vegetarian options courtesy of Ibiza Food Studio, with the option to add caviar or truffle to most dishes.

Noja and Ibiza Food Studio have reputations for fusing the highest quality ingredients with precision techniques and exceptional service – now, the two combine for something truly out of the ordinary.

As Marstrander attends to the growing Cotton Lifestyle Group empire across Europe over the winter, Buono will step up as host. “Boris will have a front-of-house role, he’s very open and definitely a big part of the experience,” explains Marstrander. Buono relishes the contact he has with his diners and the petite space at Noja is analogous to the Ibiza Food Studio vibe. “I’ll be there hosting and cooking too with the omakase team,” he says. “I’m looking forward to being part of the show.” Marstrander readily admits that this new concept is somewhat improvised and that people should be ready to enjoy the evening, Ibiza style. “It’s an experiment,” he says. “Something fun for everyone in winter.”

As well as his cheerful disposition and obsession with excellence, Buono is also bringing along a selection of the eclectic and extensive wine collection from Ibiza Food Studio – think small batch natural wines with eccentric back stories, classic drops from conventional vineyards and lots of bubbles – so diners can mix and match with the outstanding sake and wine available at Noja. “Boris is really into Champagnes and sparkling wines, so he’ll have a lot of interesting options,” says Marstrander. Enthusiastically expanding on the theme, Buono is excited to introduce diners to les champagnes de vigneron, sparkling drops of goodness made outside of the commercial realm by vintners dedicated to the delicate cultivation and production of champagne sans the demands of multinational marketing.

The intimate space seats just 24 diners at any one time and this exclusive collaboration runs only until the end of February so reservations are essential.

Both Marstrander and Buono see their partnership as a way to give something back to the island in the off-season – giving islanders a chance to get together with friends, dress up a little and enjoy high-level gastronomy even on the darkest nights of winter. But with this calibre of food, service and style – Buono has a history in fine dining including a stint the revered Noma in Copenhagen and Marstrander has helmed his own successful hospitality brand for over a decade – the Noja featuring Ibiza Food Studio pop-up is also a great reason to plan a trip to Ibiza. Vino & Co Primer Baño del Año – New Year’s Dive 2023 at Las Salinas

Taking the plunge into the chilly sea at Las Salinas on the first day of the new year has long been an Ibiza tradition. Ten years ago, the Hamersma family – the brains behind the popular Vino & Co store in San José – began to host the day as an official event to raise money for charity. Bring your swimsuit and your courage and Vino & Co will look after the rest, with plenty of wine served in biodegradable cups for those who brave the (ever-so-mild) waves. Stop by the Vino & Co store or visit them online in the lead up to the event to buy an event t-shirt, with 50% donated to Proyecto Juntos – an Ibiza based NGO that provides support to hospitalised children and their families. For the first time in Ibiza history, there’s a new contender when it comes to major league after parties on New Year’s Day. In 2023, much-loved club brand Elrow bring their sequins, sparkles, feathers, flotation devices, crazy costumes, wacky performers, balloons, flags and glow-sticks to Amnesia Ibiza for a day-to-night extravaganza that will ensure you start the new year on a fun and fabulous note. Cas Gasi Restaurant is truly something special throughout the festive season. With parties popping up all over town, Vara de Rey looks like the place to be to kick off the 2023 New Year celebrations and the team at La Cava have devised a very special set menu for the occasion that’s 100€ excluding drinks or 125€ with a selection of wines, beer and soft drinks until midnight. Start with an innovative appetiser that fuses croquettes with Spanish calçots in romescu sauce, followed by your choice of Thai scallop salad, baby veggies cooked in the Josper oven or duck cannelloni with foie, mushrooms and pear. For mains, choose between the veal terrine with potato puff pastry, the Galician turbot in albariño sauce or the mushroom risotto with pumpkin cream, and for dessert, the creamy white chocolate and with red fruit micro-sponge cake with a crunchy pistachio base is the perfect sweet treat. At midnight, diners will be given 12 lucky grapes to coincide with the clock striking midnight and the dawn of a new year!

Finally, dessert is a sweet futomaki filled with rice pudding, dulce de leche and vanilla ice cream. Their unique event – The Sacred Fire of New Year – features an Asian set menu journeying into the flavours of the sea (with vegan options available), with dishes such as fried rice nigiri with flambé salmon, red prawn carpaccio, lobster Pad Thai and more. Music is an essential element in the VIVO Bistro realm and a DJ set from DJ Etna and Rebecca Sadr from Giardino Dei Visionari completes the experience. When Christmas is over and you’ve recovered from Boxing Day, but New Year still feels out of reach, what else is there to do but eat tacos? The team at Chidas Bar and Cantina have devised a very special menu for the entire holiday season (not just for Christmas!) with a big dash of Mexican Christmas spirit – or spirits, as the case may be and in this case it’s agave! The set menu is just 30€ per person (excluding drinks) and includes an array of tacos including cochinita pibil and gobernador, abuela’s tamales with seabass and nopales (cactus), plus arancherra marinated with with morita adobo and served with caramelised peanuts, jalapeño pineapple and cream of potato. Last but never least are Torrijas for dessert, with avocado and dark chocolate ganache. If you can’t make it at Christmas, no pasa nada – the menu is available daily until New Year’s Eve.
